Due to a staff member's maternity leave, I no longer have enough time for coffee bean sorting.

Our shop is located in Hakuba, Nagano Prefecture, a tourist destination, so during the busy winter season, we need to sort about 40kg of coffee beans per month.
For years, I felt that time spent sorting coffee beans was wasted, but since the shop isn't very large, I hand-picked the beans during quieter hours when fewer customers were around.
However, just before the busy winter season, two staff members took maternity leave. To cover for their absence, I had no choice but to take on various follow-up tasks.
As a result, it became difficult for me to secure time for coffee bean sorting.

With two staff members on maternity leave causing a staffing shortage, I was thinking about possible solutions when I came across Avercasso's coffee bean AI sorting machine through an online search. I thought, “This might be really good!” That's what sparked my interest in Avercasso's products.
After experiencing the CS One product demo, we decided to implement it.

I looked for products capable of automatically sorting coffee beans beyond avercasso's offerings, but other companies only produced large-scale models suitable for factory use. None offered a compact size like avercasso's that could be placed and used in a shop. This was a major reason why avercasso's product caught my interest.
Since an employee on maternity leave had the opportunity to visit Tokyo, I asked her to stop by avercasso's Tokyo office and experience a product demo.
Staff brought coffee beans to the avercasso office and conducted a product demonstration using those beans.
After hearing high praise and positive feedback from staff who experienced the CS One product demo, we decided to introduce CS One to our store.
People have different perspectives and values regarding capital investment.
I felt that introducing CS One would not be an expensive purchase at all if it led to reduced labor costs and improved coffee quality.
Above all, the improved coffee quality, increased work efficiency and productivity, and the fact that I could now use the time I previously spent sorting coffee beans for other tasks made me feel this investment was a very good one in the long run.
The best part was letting CS One sort the beans — it gave me way more time to actually be a barista behind the counter.
I am not only a business owner but also a coffee barista. I have the most knowledge and experience with coffee at this shop. I believe the person with the most experience and knowledge about coffee should be on the floor serving customers whenever possible.
By entrusting the coffee bean sorting task, which previously consumed a significant amount of time, to CS One, I can now dedicate more time to supporting store staff and performing my duties as a business owner.
By outsourcing the coffee bean sorting process—which previously consumed significant time—to CS One, I can now dedicate more time to supporting store staff and fulfilling my duties as a business owner.
Above all, I feel that introducing CS One has been most beneficial because it allows me to spend more time behind the counter as a barista.
